Botanical Morphology and Enzyme Kinetics of a Pineapple

The Pineapple (Ananas comosus) is a tropical "CAM" (Crassulacean Acid Metabolism) plant. This physiological pathway allows the plant to close its stomata during the day to prevent water loss and open them at night to absorb $CO_2$.

Technically, a pineapple is a "Coalesced Multiple Fruit." It develops from a cluster of individual flowers, each of which produces a fruitlet that fuses into a single central core. A primary biochemical characteristic is the presence of Bromelain, a complex of "Proteolytic Enzymes." Bromelain is highly effective at breaking down peptide bonds in proteins, which is why it is used industrially as a meat tenderizer and in pharmaceutical applications for its anti-inflammatory properties. The sugar-to-acid ratio (Brix value) is the technical measure of maturity, controlled by the "Hydrolysis" of starches into sucrose during the final ripening stage.
